Trying new plant based recipes

Took a day off today. Alarm inspection at our condos. Decided to make a What I’ve Done List, as opposed to a To Do List.

Tried a new recipe. Tempeh bacon. Steamed tempeh, sliced lengthwise and then in strips. Sautéed in maple syrup, vegan Worcestershire sauce, oil, cayenne, and liquid smoke. For a TLT, tempeh lettuce and tomato wrap. With avocado. Was crunchy and meaty like bacon.

Right now I am making Broccoli Stuffed Potatoes for dinner tonight. With a cashew-based cheeze sauce. Hoping the fire inspector comes early so I can get a haircut. I’m all gray now. Still getting used to it.

My goal for today: use stationary bike for 10 minutes, and walk around condos for 10 minutes.

    ooh, your food sounds yummy - I can overeat smoked tempeh 'bacon' - guess it's the salt and fat combo. So delicious!

    Hope the fire inspector came early so you could get your haircut. I need one myself pretty soon. So how do you like being all naturally colored so far?

    I buy non GMO pre seasoned tempeh strips, just have to bake them to crisp them up (Lightlife Foods, MA). Had your potato for supper yesterday but mixed a "feta" faux cheese made in Prince Edward Island into the stuffing rather than the cashew sauce, the base in the feta is almonds. Tonight roast tempeh, carrots, Brussel sprouts and sweet peppers over quinoa with a miso/tahini sauce.
    I like your list idea, let's you see your accomplishments!
