I recently started looking into cookbooks that address the problem of cooking for one or two.
To me, recipes like this are important for quantities. John and I eat very healthy, but clearly we eat too much.
In looking up a recipe for two quesadillas, the recipe called for only 1/4 of a bell pepper. I would normally use more than 1/4 bell pepper because it is so low in calorie, but what I need to remember is that both hubby and I need to eat less food. If I use more than 1/4 bell pepper, then the filling will not fit properly into the quesadilla and we will be eating too much food.
If we remember that our stomach should be the size of our closed fist when it's not extended all out of shape then that should help us remember that it's not just calorie, it's actual quantity. So the proportions of protein, fat, and carbs are very important if we're not going to eat too much!
