Skinnytaste's Mediterranean quinoa salad. I added red bell pepper and subbed green olives for black. Feta to be added later.
There are so many ways to play with this salad. I sometimes add a can of rinsed chickpeas. Any cherry type tomato will do, such as yellow pear tomatoes. Also fresh cilantro or parsley is good.
