Keto in 2019

I've been doing a low carb diet the past few months, and have decided that I'm finally ready to commit to a ketogenic diet in 2019. This means I'm going to limit my carb intake to 20 grams a day or less. When doing low carb I was under 50 grams of carbs a day. I've been doing lots of research, and I received three keto cookbooks for Christmas. I also got a book called The Diabetes Code by Dr. Jason Fung. I'm convinced that lowering my carb intake will help my hemoglobin A1C levels and improve my insulin resistance and type II diabetes. On my low carb diet, I had improved my A1C over three months from 6.6 to 6.1. My goal is to get it under 5.6 (which is the non-diabetes level), and the keto diet and intermittent fasting seem to be the best tools to achieve that goal, so that's what I'm doing in 2019.
Today was a great start on my plan. My hubby and I cleaned and reorganized the kitchen, cabinets and countertops, to make meal prepping easier. I have plenty of keto friendly foods in the fridge, freezer and cabinets. I'm ready to use those cookbooks and make some healthy dinners!
I'll keep this blog short, but wanted to post my plans for the coming year. If anyone is also doing keto and wants to share their struggles, journey, questions, recipes, etc., with me, please let me know and I'll be sure to friend you and support you. If you have no interest in keto, that's fine too...I'm not here to convince anyone to try it, as I think everyone has to pick what food plan works best for them.
