Day 11, Making LC Fudge

I did an 18 hour fast. I've been having the low carb peanut/coconut butter fudge nearly every day. I find it really helps with the cravings. I decided to make another batch for next week since there was only one fudge left after I ate one with my meal today.


INGREDIENTS:
1/2 cup coconut butter*
1/4 cup peanut butter*
*(Basically 3/4 cup of any combo of nut & coconut butter you prefer)
100g of 70%+ Cocoa Chocolate broken in pieces
1 tsp vanilla extract (or peppermint extract if you prefer)
Liquid Stevia to taste

I put the butters in a large microwave safe cup, add the chocolate pieces & extract.

Then I stick in the microwave on 60%power for about a minute.

Then I get it out & stir it with a spoon until smooth. If the batter is still chunky, heat it for another 20 secs at 60% power and check again. Repeat until you can stir it into smooth batter.

Then I add the Stevia, mix well again.

I split the batter into 6 muffin paper cups & place on an even surface in the freezer for about 1 hour to set. Once set, I place them in an airtight container or baggie in the freezer and eat them throughout the week. I think they would easily last a month in the freezer, just I & the others eat them before the week is done.


I originally wanted to make something similar to PB cups, but I was tired and just melted it all in the microwave at 60%, mixed & split it into the cups. The stevia burned on my first attempt, so now I add it after the microwave. But even the first batch of fudge with the burnt stevia tasted okay. So now this recipe has been a keeper.

You can probably make more than six servings from the batter, but because I usually fast & eat one meal a day, I like my serving to be satisfying. Also these melt easily when held, so I use the paper wrapper to hold the piece while I eat it. Don't thaw. Just eat straight from the freezer!
