Kidney Casserole

A slight diversion from The Wedding of The Century [yes there's more to come]. I have been cooking up a storm this week. To some extent a de cluttering of the freezer and store cupboards. No doubt I'll also blog more about that in the next week or two. Meantime, I came across 3 portions of lambs kidneys in the freezer. Not something I'd normally buy. It's clear from the label they were 'reduced' but I wouldn't even buy reduced stuff without a plan in mind. I honestly can't remember now what I intended to use them for which is very unusual for me. No matter. The worker friend is coming tomorrow so I have used one portion to make a Kidney casserole. I have to admit that's a first for me. I'm not really a lover of offal. Every so often [maybe once a year] I make a liver casserole - I've done much the same with this.

I've put onion, garlic, mushrooms, chopped up bacon [sans rind natch], de veined kidneys, black pepper, thyme, a good slug of red wine plus tinned tomatoes into the slow cooker. I plan on serving it with steamed veg and either mash or rice depending on consistency and overall taste. Cook's privilege to taste innit. Truth be told it looks a bit sickly but I'm sure it will be fine once it's cooked.



Also cook's privilege to have a glass of the aforementioned red wine............
