morning cuppa spark - vegan green soup (aka clean out the fridge soup)

today's shout out goes to watermellen - while she was making and blogging about cauliflower soup this weekend, i made a similar soup, accomplished similar tastes - vegan style:-)
i had been saving broccoli stalks and had one limp crown, so into the instant pot it went. half a head of cauliflower, chopped and in. we had asparagus for dinner one night, and the ends of the stalk were just begging to be part of the soup. one pathetic carrot. 3 cloves of garlic, into the pot. leek and zucchini (actually bought for the purpose), and for extra protein and creaminess a package of white beans (equal to a can) from the freezer. for cheesiness a quarter cup of nutritional yeast. thyme and a good dash of mixed herb non salt mix from costco. a good squirt of aminos. salt and pepper water to cover. three minutes in the instant pot, or just cook on the stove until soft enough to use an immersion blender or regular blender. DH says it was one of my best! (a dollop of dijon or sriracha when serving doesn't hurt...)
i wish i were a meal prep kinda person, though it almost feels that way. by the end of sunday i had two soups in the fridge (we'll be having my favorite vegan thai soup today),
the remains of a farro mushroom white bean pilaf that i turned into a "bowl" mixed with kale and topped with miso tahini lemon garlic ginger dressing that made two more meals,
and two meals of vegan "crab cakes" -
that i made in the air fryer (yeah, i got a new toy:-)
maybe i did do some meal planning after all!
