It's been a while... oops

I kinda forgot about writing my blog.

Oh well.

I have been trying to eat a lot more vegetables lately. I have been having fun playing with squash. I brought my daughter to the farmer's market and told her that she could get any vegetables that she wanted. She picked out the largest butternut squash she could find, a pumpkin, and a green squash that I don't know what variety it is. It cost me $4. I love the farmer's market.

I can not emphasize how big this butternut squash was. It was bigger than my cat. I got 14 cups of chopped flesh from it. We have been having squash soup non-stop. I don't really know what else to do with it. I have tried roasting it, but it isn't like a potato. You don't get a good crispy bite out of it. It goes mushy. I guess we could just have squash puree, but I don't think she would eat it. She doesn't like mushy food. I can't even get her to eat mashed potatoes.

Any suggestions? Also, what do I do with the pumpkin?
