The fast went without a hitch. I didn't think I had that much cooking to do, but it turns out to be a two-day affair which caught me by surprise. I cooked 2 batches of Phad See Ew. One with the rice noodles on Sat and one with buckwheat/wheat noodles on Sun. I experimented with sliced beef, soaked in brine for 24 hours and deep fried at 300 F. A lower temperature than normal for deep frying. I did the same thing with chicken wings. The wings will finish cooking tomorrow. I'm looking forward to taste the beef tomorrow. I'm curious if the beef will be tender.
P.S. Monday morning, the beef wasn't too bad. It's not super tender but it's not tough either. The beef is definitely on the menu on a permanent basis. It was the first time I used coconut oil. I'm not too crazy about the taste or the smell. I'll opt for ghee or duck fat once I run out of coconut oil. Phad See Ew was great except for the oil.
