Update on son and my unhealthy habits

Today starts a new month and with it a new will to make healthier choices! I have fallen back into my stress eating and my too tired for exercise mindset.
Part of this was caused by my son's need to be taken to PT and doctor's appointments and helping my parents out with minor things. Mom and Dad live about an hour drive from me. My husband has been filling in on midnights for the full time lady so she can take care of some family health issues. He normal works 2 part-time jobs for a total of 40 hours a week but with working 5-6 days at the hospital and 3 days for the health department. He's tired and unable to help with the running around. I work full time and do some work for my Dad from my home.
My son's knee surgery on 9/4 went well. He was in surgery for about 4 hours. The ACL was a complete reconstruction and the MCL was a partial reconstruction. The tear in the MCL was worse than originally thought. The outer meniscus was not able to be repaired but there is a small portion of it left. It was cleaned up. My son isn't allowed to bend the knee or put any weight on that leg yet. He goes back to the doctor's office on Wednesday and I'm hopeful that he will be able to take a shower standing up and start to put some weight on the leg and bend the knee. Right now, his foot still swells up if he has it down (sitting in a chair or standing)
I have not done any exercise to speak of and I have not made the best food choices. I did make a great breakfast yesterday. I had some old apples in the fridge and chopped them up and made an apple oatmeal with them. I used about 4 apples and only made 2 servings of oatmeal. I added ground cinnamon and ground nutmeg to it. The apples were sweet enough that no sugar or sweetener was needed. It was enough food for my husband, son and I to have breakfast yesterday and my hubby and I to have breakfast today.
I remembered to bring a healthy lunch with me to work. I have to run out to my parent's house after work so dinner will be late and I'm not sure what I will make. I have leftover lean taco meat and some leftover rice with beans in the fridge and I may do something with it.
I am planning on trying to fit some walking in while I'm at work today. I need to start to take care of myself again.
