Thirty First Weekend Fasting Cycle - Buckwheat Pineapple Pie

My weekend fasting went without a hitch. For cooking this weekend, I've finally done something with buckwheat. It's been more than a year that I wanted to make something with buckwheat and it finally came true. Buckwheat has rutin which is supposed to be really good for the blood vessels.

It turns out be an exercise of love because it was a lot of work. So I soaked, dried and toasted buckwheat groats. Then grind it with the food processor. For the crust, I added brewer's yeast and butter. Since buckwheat has no gluten, I wasn't trying to make it like wheat dough. Just pressed it down against the pie plate. The second topping is sticky black rice cooked in coconut milk. The final topping is one pineapple thickened with tapioca starch. I won't know how it tastes until Mon morning when I break the fast. This pie is super healthy having brewer's yeast for vitamin B complex which is hard to get.
