No Excuses Not to Cook!

I love books, especially cookbooks; I read them like a fine novel. I am not a fan of digital books or internet recipes, I prefer paper that gets used, greasy, torn, marked and loved. I have a small collection, edited now to include only vegan/vegetarian. These five are my "go to's"; their recipes are simple, tasty, use ingredients that are readily available in most grocery outlets and provide excellent nutrition. So let's begin:
Angela Liddon is a Canadian mom, cook, photographer and entrepreneur who discovered veganism as a solution to her chronic IBS. She is now healthy and hugely successful with her books, website and Facebook blogs. She does like her smoothies; not being a fan of those I skip those chapters in both books.
Dr. Michael Greger of the Daily Dozen fame has given us 100 recipes that produce the healthy results he discusses in his companion text. Again all easy to prepare, a favourite is his miso and tahini sauce that is served over roasted veggies or anything else your heart desires.
An excellent book for all, especially vegan athletes and folks with children. It is co-written by Stephanie Romine of Spark People fame and includes lots of nutritional advice as well as the excellent recipes.
My latest acquisition, picked up while I was in Scotland. Mostly vegetarian but also some meat dishes for flexitarians among us. The author learned to cook from his East Indian mother and while in med school came to realize the importance of healthy food when he himself became ill due to long hours of work and study. He is now a family doctor and includes nutritional counselling in his busy practice, encouraging his patients to use diet as medicine rather than relying heavily on medications. If you like flavours from the East this is a good choice and the recipes are simple to prepare.
