Dr put me on the 6 Food Elimination Diet

Good Morning, I went last week and had a scope and the Dr took biopsies of my esophagus. He called yesterday morning and told me that the biopsies showed that I have Eosinophilic Esophagitis which is a type of white blood cell (eosinophil) that builds up in the lining of the tube that connects your mouth to your stomach (esophagus). This buildup, which is a reaction to foods, allergens or acid reflux, can inflame or injure the esophageal tissue. Damaged esophageal tissue can lead to difficulty swallowing or cause food to get stuck when you swallow. It's a chronic immune system disease. So he put me on the 6 food elimination diet which means that I cannot have Dairy, Eggs, Wheat, Soy, Nuts & Tree Nuts or any Seafood. He wants me on this for 3 months and then wants me to have another scope. I went shopping last night to get the foods I can eat which was difficult! You have to look at every label because almost everything has soy of some form in it! Thank goodness we have a grocery store here that has a whole specialty isle! I will post weekly to let you know how it is going if anyone is interested. I had fallen way off the wagon so this is at least a way to get me back on! :) If anyone else is on this diet please comment and let me know how you are doing with it. Have a great day!

    Concentrate on eating whole foods, most processed foods have soy in them. You may also want to visit a natural grocery store or specialty store. I have had good luck with those kinds of stores as I am allergic to 2 of the top 7 allergens.
