My new Instant Pot

My son and daughter-in-law from the west coast came with their two children and spent time with us at the beach this year. As usual, they introduced me to something new that I would never have known about if I didn't have kids.
Instant Pot is the new modern version of the pressure cooker. It is an electric pot that allows you to saute foods, and then cook them under pressure. Then you can let them sit for a while - as you would with a slow cooker.
There are a couple of recipes that come with this very versatile pot - but I have purchased another more comprehensive cookbook for it.
(My son and his wife use theirs to make Indian dishes, which they love.)
We used the pot to make one family meal at the beach: short ribs with vegetables. The meat turned out to be tender and delicious, and it only took about an hour to cook.
I am looking forward to having lots of fun cooking with it in the days and weeks ahead.
