Raw Chocolate Energy Bites
Yields 10

Ingredients
1 cup raw sunflower seeds
1/4 cup cocoa cacao powder*
1 tsp vanilla extract
1/4 tsp sea salt
1 cup medjool dates, pitted and chopped
1-3 tbsp water
1/4 cup cacao nibs
cacao powder or unsweetened shredded coconut, optional for coating

Instructions
Place seeds in a food processor, and process until finely ground. Pulse in cacao, vanilla, and salt.

Add in the chopped dates and water, 1 tablespoon at a time until the dough comes together nicely. Process until all ingredients are distributed evenly (you may need to stop a few times and scrape down the sides and separate the dough if it forms a ball).

Pulse in the cacao nibs.

Roll pieces of the dough into small, tablespoon-sized balls. You may roll them in the cacao powder, shredded coconut, or any other toppings of choice.

Place your energy bites in a container in the refrigerator or freezer for at least 30 minutes, then serve!

Notes
You may store these energy bites in a sealed container in the refrigerator for up to 5 days or you can freeze them and eat them directly from the freezer as they don't get hard.
*I used Hershey's Cocoa 100% Cacao Special Dark Powder because that's what I had at home.

Recipe copied from the link at the top. I rolled my bites in toasted coconut flakes.

I was considering this as a snack for July and tested them today, they were delicious so I thought I would share the recipe with you guys. There is 0g added sugar but it does have natural sugars from the dates so if you have diabetes keep that in mind.
