Is it really all that time consuming to eat healthy at home?

My meals aren't really complicated but I always start with onion, carrot, celery, and sometimes green pepper. It takes time for me to chop/dice those with each meal. I am not really complaining because my way of cooking is way better than a restaurants. I often say that in the time it took me to prep, cook, eat and clean up it was actually less time than if we would have decided to go to town to eat out.

I first heard of that concept on the Rachel Ray show many years ago when she was promoting the cookbook of 30 minute meals. She went through the process of cooking a meal and then commented on how home-cooking was actually less time consuming that getting every one dressed and ready to go out, drive to the restaurant, get seated, read the menu, tell the waiter what you wanted, wait for someone else to cook it. Then eat it and drive home.

I realized that, even when I lived in town, that was true. It actually is quicker to cook a meal at home rather than go out to a restaurant. Plus, if at home, one can even do other things while the meal is at the no-hands-on stage.

Well, this is true for me, how about you?
