My personal favourite is a portable rice steamer, and a selection of different whole grains. I keep a bit on hand of wild rice / brown rice / amaranth / quinoa / bulgur / sorghum / teff / oats / barley or whatever, and then can steam whichever mix I'm in the mood for. It's easy to add in veggies and a protein and cheese or nuts - and a splash of lemon juice or balsamic finishes it off. The resulting mix can be had warm or packaged to cool as a "salad" later.
