Banana Chocolate ‘Mug’ Cake

350 for 12 minutes
Small rectangular Pyrex glass pan

1 ripe banana
2 eggs
2 tbsp almond milk
2 tsp coconut oil

3 tbsp coconut flour
2 tbsp almond flour
2 tbsp cocoa powder
1/4 tsp baking powder
1/4 tsp baking soda

Chocolate Chips on top

Mash banana in bowl. Melt coconut oil in mug or dish. Add other wet ingredients until combined. Add in dry ingredients. Mix in walnuts if using and pour into dish. Sprinkle with chocolate chips if using. Bake or ‘nuke’.

    There was some banana flavour but I didn’t think it was super strong.

    You could use applesauce or puréed dates or a tbsp of your favourite sweetener instead but if you use sugar or a sugar substitute you would need to add more almond milk to add moisture, probably an extra 1/4 cup.

    I'm assuming the banana was used in place of sugar? -- Does it come through "strongly" in the finished product? (I'm all about chocolate--but the banana not so much?!)
