I need breakfast to contain a protein or a fat, or both, to keep me feeling well throughout the morning.
The egg dishes I prefer are scrambled or in a vegetable omelet or frittata.
I like deviled eggs, substituting yogurt and/or cottage cheese for the mayonnaise to reduce the calories.
Some of my non-egg breakfasts at home are:
--Peanut butter on apple slices
--Ricotta cheese (flavored with vanilla) on whole wheat toast
--Avocado sliced on whole wheat toast

These are low-carb pancakes made with oatmeal and low fat cottage cheese.
These crepes are made with ricotta cheese. They can be filled with cooked veggies, e.g.mushrooms, onions, zucchini, etc.
Here are some muffins made with Greek yogurt and oatmeal. (The author adds in sprinkles and other 'kid' items and calls them cupcakes. She also adds a protein powder based 'frosting'.)
Recently, I ordered a breakfast burrito at a restaurant, containing eggs, feta cheese, avocado, and other goodies, and it was delicious. There's no reason they couldn't be made at home, using whatever ingredients we like.
These new breakfast ideas should keep me busy for a while. I am looking forward to trying them out.
