Quick Meal Ideas

Today's writing prompt was to share quick meal ideas. This is a tough one for me. Partly, because I work at home mostly and partly because the ideas from today's video horrified me. Canned peaches? Canned tuna? Mashed navy beans? There are so many better options.
One thing that has worked well for me is to have cooked quinoa and/or brown rice in the fridge. I supplement that with precooked beans or legumes (my Instant Pot makes this very simple) homemade seitan or baked tofu and frozen vegetables. seitan-51208410 ), or even a tomato-based sauce like marinara or salsa. It's quick and hearty. It also makes for a good meal on the go when I do work downtown occasionally. If I do not have an appropriate sauce for my bowl, I will sprinkle on some nutritional yeast for extra flavor. My daughter does not like tofu or seitan plus she eats meat so she pre-cooks chicken or lean pork for her quick bowls.
I am looking at the nutritional values of some other sauces I like and hope to make those lower fat and sodium to help balance my meals.
