Still going strong...

I'm 6 weeks in to my program with my trainer now and I'm still going strong.

Last week, I got butter back...
That sure expands my menu options. LOL!

So this week I've added a buffalo chicken salad to my lunch. I basically cook up chunked up chicken breast like a stir fry using butter as my fat then finish off with Franks Red Hot and a little extra melted butter. I serve it on a bed of salad greens. Simple and delish!

My weight loss has slowed a little; but that's okay because it's still going away. Plus, I'm still feeling great!

On the happy side of my news, I also just found out that I won't need more eye surgery right now. The bad part is I'll have to deal with a little bit of blurriness until it resolves itself (doc says a few months); but I'll take that over surgery!

I'm off to the endocrinologist this week too for my annual checkup. I'm really curious to see how my blood work comes back. It will be interesting to see if my new nutrition plan is helping that improve as well. Fingers crossed!
