another week. blink! friday slipped right by... we woke up to rain, which is lovely for the garden, but makes for a muddy border collie. we have red dirt here, and our fluffy white BC is turning into a pink pup. oh well-) we left for a latish walk around 11 and came home to a huge pot of minestrone soup in the instant pot, which will be lunch for the next few days.
we had friends over for dinner and i made a vegan lasagna - i make a tofu ricotta, essentially following this recipe
and the lasagna noodles were made from lentils (!). layered the whole thing with sliced zucchini and mushrooms, threw on a few kalamata olives, and topped with spinach and sauce - i cheat on the sauce and use muir glen organic spaghettis sauce. i also made a version without noodles (!) for two of our friends who are following a keto diet, adding some roasted red pepper and sliced tomatoes to theirs.
and we have leftovers, so the next few days of meal planning are done.
weight is creeping upward, and i suspect it is the tortilla chips that went with last week's mexican quinoa dish. i'll pull back on the chips and the bread and should see a return downwards.
we ran again on thursday, and will run today. fell slightly short on steps yesterday, but i wanted to get to bed early (my guests are used to me disappearing by 8) because i have to work now, and get back to bed in order for us to get an early start with the morning run - DH is finding it is easier if we get up by 7 and out before 8, before the heat of the day really comes up.
