Tonight's Not so Quick Dinner

For dinner tonight- made a chicken pot pie using leftovers from Thanksgiving. I always seem to struggle prepping dinners like these- chopping and saute the veggies, and the add ins and then the baking. I started preparing at 4:45 and the final product came out of the oven at 6:30. It was good and felt good knowing what was in what I was eating though.

What are your favorite quick healthy meals that are from prep to table super quick?

    I love home made pot pies! My go to quick fall meal is roasted root vegetables. I uses potatoes, beets, carrots, jicama, and parsnips. Put it in a huge pan with olive oil, salt and pepper and roast in the oven!

    Oh, that's a good question. Leftovers comes to mind, but that's a cheater's way out. Mine would be chicken stir fry. I use kitchen shears to cut up the chicken breast.
