Yummy Butternut Squash

Surprisingly, it is quite easy. The hardest part of the process is cutting the raw butternut squash in half and peeling it. Then, it is just a matter of cutting it into thin slices, sticking some herbs between the slices, and covering it with a glaze made of maple syrup, apple cider vinegar, and butter. (Personally, I would leave out the hot pepper that they also include.)
Butternut squash is a real fall-time favorite of mine.
I especially like butternut squash apple soup! There's no need to peel or slice the raw squash when when making the soup. Just put it in the oven to cook - then peel it and enjoy the richer flavor brought out by the roasting.
This is a recipe I plan to tweak and try this week for a hearty - and healthful - soup. (I will omit the bacon. The soup should taste delicious all by itself.)
