Hello fellow sparklers,
It's that day that comes around once a year, and can sabotage all your good efforts - all for the sake of cake.
I am 6 2. No, not 6'2". I am 62. I think I just might fall over.
No, I'm not unsteady on my feet, it is just hard to believe just how fast time flies.
Now... for my birthday wish. I didn't meet the outrageous weight loss I aimed for and missed a year ago, or even two years ago. But I will say, I have lost ten pounds since August 2, and am lighter for my birthday than this summer, and that makes a wish come true. I will continue to work at melting the birthday candle down, and trimming the sails, so to speak. That amounts to 5 lbs per month, which is better than the 2 lbs per month I lost last time I made this journey. More to come, or I should say, more to go. I will keep on with my physical therapy/yoga, wii fit balance board, and counting my steps, and my food, and my water.
Now, back to the cake.
I made some in late September for my husband's 75th birthday.
First cake I'd had in about 5 years due to my egg allergy (I used aquafaba and banana to substitute for it.) Came out great.
So for my birthday, I would have loved eggless cheesecake, but with hubby just getting over shingles, and the fact I had a little icing left over and the cake is easier to make, We made cake together tonight, like the one I made for him.
I cut it into 16 servings. It is rich. I used bananas and Vegg egg subtitute on this one, and homemade cream cheese icing (less sugar than frosting).
I will eat cake. I counted the calories. Yes, my count is up today. Oh well. It IS my birthday.
Getting healthy is my job, one step at a time, one day at a time.
ps: The first part of my day was spent at the orthopedic dr about my back - extending physical therapy another month, visited a craft and sewing store, ate a light lunch (somewhat), came home, and got busy.
