Buddha Bowl by Kim Campbell

The Buddha Bowl from the PlantPure Nation cookbook by Kim Campbell is delicious, filling, and nutritious, not to mention colorful as well. On a warm bed of quinoa, you layer lightly steamed broccoli and kale, chickpeas, diced red bell pepper, scallions, and cherry tomatoes, and then top it with sweet tahini sauce. It is bit of work to compile the various ingredients (seven of them!), but it is definitely worth the effort.

A very nice summertime alternative to soup. Ours is a magic Buddha bowl because it keeps refilling--I make note of which ingredients need replacing and keep the party going!
