Creole Corn Chowder from Better than Vegan by Del Sroufe

This is a very yummy corn chowder made with homemade soup stock (leeks, carrot, celery, etc.) and cauliflower puree. I added back the carrots from the stock and also added red beans because my husband always says, "Where are the beans?"

This was the first time I had ever made this particular soup stock and the first time I ever added cauliflower puree to the base for a chowder, and let's just say the effort was rewarded in spades. It's very yummy and quite filling.

    DRN275, This soup is made with no oil whatsoever, so eat your fill and satisfy your sweets cravings. It is filling, so you're unlikely to eat too much. The photo cannot convey how yummy this soup is.

    TERRALOVE and MAYIE53, this soup is a rainy day project, as there were at least three stages of making the soup: making the stock (45 min simmering), making the cauliflower puree (doesn't cook long, but then you need to puree it), and then dry sauteeing the mirepoix veggie base. HOWEVER, I have stock leftover for another batch of soup and it makes a generous pot of soup. DELICIOUS!
