Creole Corn Chowder from Better than Vegan by Del Sroufe

This is a very yummy corn chowder made with homemade soup stock (leeks, carrot, celery, etc.) and cauliflower puree. I added back the carrots from the stock and also added red beans because my husband always says, "Where are the beans?"
This was the first time I had ever made this particular soup stock and the first time I ever added cauliflower puree to the base for a chowder, and let's just say the effort was rewarded in spades. It's very yummy and quite filling.
