Went to the farmer's market and the grocery store this weekend and am ready to tackle the week.
Leftovers (see dinner)
Salad & Burrito
Chickpea (mock tuna) salad sandwich on 5 seed bread & fruit or pretzels
Roasted Veggie Enchilada Casserole (OMG SO GOOD)
Egg Roll in a Bowl (haven't made it yet)
Faux Chick'n & vegetables (I have tons of cauliflower, plus asparagus, broccoli, and bok choy)
Energy Balls (pre-workout snack)
100-calorie protein shakes
