Last night I made a delicious dinner that was enormous and also really low in calories.

I just sautéed:

Onion (1 small)
Garlic (2 cloves)
Mushrooms (8oz package, chopped)
Broccoli (2 cups, microsteamed for 1.5 minutes before adding)
Bok Choy (2 cups)

in a little olive oil, added 2T of store-bought veggie stir-fry sauce, and served over 1/2 cup of leftover rice.

It was a *giant* plate full of food, and SO GOOD. And start to finish it took about 15 minutes to make (since the rice was already cooked).

I meant to add tofu for a little extra protein but forgot about it until it was too late. Didn't miss it.

Feels good to be back on track. Topped out at 1488 calories for the day and felt super full the whole time.

Anyone have any favorite veggie meals to share??

    I love to eat exactly like that!! I stuffed/baked red and yellow peppers with a mixture of quinoa, sautéed portobello mushrooms, Rotel tomatoes, and black beans....soooo delicious!

    Dinner tonight was a big Greek salad--cucumber, tomato, red onion, chickpeas, feta--dressed with red wine vinegar, olive oil and oregano. I would have liked a couple pepperocini tossed in it too, but I am out.

    I love to sautte spaghetti squash , tomatoes, onion , garlic, peas, and spinach.. Sometimes adding a bit of tomato paste and always some parm cheese
