Indian Split Pea Stew with Cauliflower and Potatoes

This recipe from The Vegan Survival Guide by Ursula Escher is one of our favorites. Very tasty! The seasonings are those in Indian cuisine. I love the bright yellow of the yellow split peas, and the generous servings of cauliflower, potato and collard greens (my addition) make this really fun to eat!
