Avocado Toast - A favorite breakfast

Just about a year ago, while visiting my son's family in California, I saw my daughter-in-law eat an interesting breakfast.

She sliced up an avocado and put it on whole wheat toast. Then she squeezed the juice from a half of a lemon onto the avocado, and salted and peppered it.

She offered me some, and I LOVED it.

This is a particularly filling breakfast - and it keeps me feeling satisfied long into the day. The (good) fat in the avocado also stabilizes my blood sugar levels, which can often be set off by other breakfasts with more carbs (yogurt and granola, e.g.).
