I've now begun Phase 4 with my SparkCoach program. Today's lesson is about continuing to find motivation through the long journey of weight loss and becoming healthier. I need to pick between 1 and 3 new goals to work towards.
Last month I made a dietary switch and became a vegetarian. The biggest reason is economical. I can buy lean meat where I live but it is very expensive. It's much more economical to eat plant products that are high in protein and as an added bonus have no saturated fats. I've done a lot of reading about cooking and eating as a vegetarian. This last week I've learned to make tofu and it's really good. I only made a tiny amount as it was still an experiment.
1. One of my new goals is to perfect my tofu recipe and make it once a week.
2. I also want to make a salad a day, but I think that goal is going to be trying as I need to make sure I always have fresh ingredients on hand. Many times we have cooked veggies or just sliced veggies as we don't have a lot of options for traditional salads on hand all the time. I need to think outside the box and come up with 10 good, healthy and non traditional salad recipes. I think I can manage that (maybe).
