We had a great end-of-the-season Galloway party. Here I am at the photobooth with the two new runners I ran with that morning, finishing their first 5K race ever.
I took the crunchy cucumber salad I have posted before recipes.sparkpeop
but added more different colors of bell peppers beside the cucumbers, onion, celery, and radishes to the seasoned dill and garlic apple cider vinegar. I was truly surprised that every bite of my salad was consumed and I didn't have a bit to bring home! Isn't it great that this group loves their veggies??
The party "favors" we all received are medal hangers with wood-burned Galloway logo and the picture of a road with a runner. One of the members made them. What a perfect gift for this group!
My nephew asked me to run with him this morning. He has to work Saturdays, so can no longer do Galloway group runs. My training plan didn't call for a run this morning, but I want to encourage him and I knew it would be an easy run for me. He wanted to do :30/:30 run/walk at a 15 minute per mile pace. He said the :10/:30 run last Sunday with Joy was too slow for him. We ran-walked 3 miles and walked for about a total of 7 miles, at about a 17 minute pace. He is recognizing that he must work to get back to where he was with running a year ago. It was a beautiful day and he wants to make a Sunday run part of his routine. I'm hoping that even after it gets hot he will still want to do it!
We are invited to a fish fry today. Hoping I can get away without sabotaging the food plan too badly. I'll tuck a few healthy things in my purse. My grandkids are going and they are such fussy eaters. Hope it all works out. I always remember that when I can't completely control what I am eating, I am still 100% in control of the portions.
