Dinner Party Went Well

I enjoy entertaining. Particularly at dinner. I get to cook something I like (or hope I'll like), and the atmosphere is likely upbeat.
Last night we had a neighbor over, a single woman who's been living alone for some 30 years. I modified the Garlic and Spinach Stuffed Chicken Breasts recipe from Sparkrecipies so that I could warm the previously stuffed breasts in the oven after our guest arrived. Increases potential conversation time, and cuts down on last minute activities. My wife made the salad. And I had baked some of that easy "artisanal" bread that's all over the web in the morning. The food turned out wonderfully without being a calorie buster (yay - Sparkrecipes). Only a few appetizers on the coffee table. No one ate much of them (including me). Good. Finally, mochi ice cream for desert. The little mochi balls make for their own portion control. Bottom line - an attractive and satisfying informal meal without overeating.
It was fun to talk with our guest for an extended time. She related some of her European background and we hear about her travels. Somehow, politics never came up. Overall a very pleasant time, and served my goal of expanding our circle of good friends and learning more from folks around us.
I see this as a successful, Spark driven encounter. All good.
