Minestrone Soup by Kim Campbell

I just made the Minestrone Soup from the PlantPure Nation Cookbook by Kim Campbell. It is delicious! It requires chopping vegetables, but once you're done, you have a big soup pot full of vegetable-y deliciousness and it's such an easy and enjoyable way to eat your veggies!
Made with no added oil and very low sodium. I used low sodium Pacific Organic Vegetable Broth.
