Quiet Day

The dogs let me sleep in this morning. It was nice to get up at 7am, instead of my normal 6am, waking up on my own instead of multiple cold noses poking me saying they want to go outside As winter comes on this will happen more often as the dogs don't like the cold either.

I didn't wake up sore and haven't had any problems since the other day other than a headache I woke up with which was probably weather induced as it went away as the weather improved.

It was a lazy day around here. More googling for vegetarian/vegan recipes, popped into the grocery store to gett a few things we ran out of - the rest of the family has asked for "regular" milk so I got some for them. I have always preferred almond milk since the first time I tried it but the way we go through milk in this house it is very costly. So I'll let them have it and they'll stay out of my almond milk.
No walk today. The weather isn't co-operating. It's finally stopped snowing/raining but now it's dark and the temperature is dropping so a little to cold for me to be out long.

Dinner was Eggplant Rollatini. The recipe is on the Forks Over Knives website. It wasn't to bad, some tweaking needed to meet our tastes but overall it was good. It was a little labour intensive but for a Sunday dinner I don't mind.
While at the store, they had tomatoes on sale for $0.20/lb so I got 3 lbs as daughter wants to make tomato soup on Tuesday when she is off. So looking forward to not having to make dinner! emoticon

Hubby is off tomorrow so I get another chance to sleep in if the dogs allow. Still not sure what I will make for dinner tomorrow. I have 4 options for this week from the recipes I picked and shopped for. Thinking I need to use up the chicken in the freezer.
