Recipe Review: BHG Barley Beef Soup

Yesterday I made this recipe from BHG Soups specialty magazine (Fall/Winter 2012): www.bhg.com/recipe/beef/

. Here are our impressions.

1. Hooray! It's a crock-pot recipe. The house smelled great when I came home after a day of doing errands.
2. It's not clear what kind of mixed vegetables are supposed to be used for the recipe. I picked a mix with corn, string beans, potatoes, and some other stuff.
3. The recipe calls for "regular" pearl barley, but what does that mean? Bob's Red Mill had a huge bag of large-looking pearl barley, but I don't know how much barley we'll be eating in the future. So, I bought the Quaker Medium Pearl Barley, and when I opened the box, it was quite a bit smaller than the Bob's.
4. The recipe calls for a teaspoon of EITHER dried basil or oregano. I didn't have a preference for either one, so used a half-teaspoon of each.
5. The nutrition info from the on-line link lists fewer calories and less sodium than our paper magazine. I'm not sure what to believe:).
6. I think this is really yummy. I ate it for dinner tonight, and will probably have more for lunch tomorrow.
7. After sitting in the fridge overnight, the starches have begun to seep into the soup, making it thicker and paler in color. Hubby was hoping for a clear beef broth with meat, barley, and veggies in it. Could this be because I used the medium barley instead of a larger size?
8. The recipe makes 8 very generous servings. I'll probably be able to stretch each 2-serving container into 3 servings, since I'll be on my own eating it.
