Recipe Review: One Pan Roasted Salmon with Potatoes and Romaine
Wednesday, November 09, 2016
Tonight we tried this recipe from the PureWow web site:
It was delicious, even to hubby's discerning palate:). This one is definitely 4.5 stars (I subtracted the .5 star for #3 below). Here are our observations:
1. I halved the recipe to yield 2 servings. I used a half-pound of potatoes, and added some carrots and onions from the fridge that needed to be used up.
2. I used the called-for 1 tablespoon of olive oil on all those veggies (more veggies than the recipe had), and the oil was too much. If I had only used the potatoes as specified, they would have been super-greasy. Next time I'll use 2 teaspoons of oil for the amount of veggies we used tonight.
3. Our salmon took about 12 minutes to cook, which resulted in the romaine being so soft it was a little slimy. I didn't mind it, but hubby didn't eat his romaine at all. Next time I'll sub broccoli, green beans, asparagus, or some other green vegetable for the romaine. Or, just serve the romaine halves cold with the olive oil/lemon/salt/pepper dressing.
4. It's not exactly a dirty only one dish recipe, because additional plates are needed to prep the romaine and fish while the potatoes are started in the oven. Still, it's super-easy, and everything gets finished at once.
Even with the semi-slimy romaine, this was a big hit. We'll definitely do variations on this again.
