PlantPure Nation minestrone

I seem to be craving minestrone soup, now that the weather has turned cooler. It's such a comforting and tasty way to get a variety of veggies every day! The PlantPure Nation Cookbook by Kim Campbell has a great minestrone soup recipe. I was crazy enough to double it, which meant a little extra time at the chopping block, but I don't think I'll regret it.
I made my own broth, the allium broth from Jill Nussinow's The New Fast Food, which enhanced the flavor. Highly recommended for a rainy fall day. Makes your house smell great, too!
