Soft pumpkin spice cookies

I have been making these as a healthier seasonal treat. They are gluten free and dairy free and 68 calories per cookie. The recipe makes 9 medium size cookies. They have a soft cake like consistency and are not overly sweet. 1/2 cup oat flour or oats ground finely 1/2 cup almond flour or ground raw almonds 1/4 tsp baking soda 3 Tbsp sugar 3/4 tsp pumpkin pie spice 1 egg 1 tsp coconut oil 1/4 cup canned pumpkin 1/4 cup apple sauce 2.3 g fat 1 g protein 8 g carbs Spoon the soft dough onto a foil lined cookie sheet and bake at 375'F for 13 minutes. Let cool. They are soft and need to be removed with a spatula. Enjoy!
