This is not a fast recipe because the delicious flavor depends partly on a homemade allium broth, which I made the night before. And then there's the veggie chopping. But this soup is so beautiful and so flavorful that I make it again and again! Leek, garlic, yellow squash, potato, butternut squash, tomato, carrot, red bell pepper--it's a delicious and colorful way to "eat your veggies" for several days, once it's made. Easy on the stomach, too, if you have issues. Highly recommended.
If you don't own the cookbook, you can borrow it from your public library, but I'll guarantee you that you'll end up buying it!
