Fit and Fiber Full Challenge Day 2

Easy peasy the first day, but would also like to "up" the amounts. Reading the challenge wall today reminded me about beans and oatmeal (er.... not together).
I always forget about beans and they're so good for you in so many ways!
Love oatmeal, but not going to breakfast on that until the weather gets colder. I do use oat flour quite a bit, though, if I'm using flours.
For anyone who's tried to up their fiber, what have you done?
