Fit and Fiber Full Challenge Day 2

Easy peasy the first day, but would also like to "up" the amounts. Reading the challenge wall today reminded me about beans and oatmeal (er.... not together).

I always forget about beans and they're so good for you in so many ways!

Love oatmeal, but not going to breakfast on that until the weather gets colder. I do use oat flour quite a bit, though, if I'm using flours.

For anyone who's tried to up their fiber, what have you done?

    I like oat in bread, cookies, etc.... hate oatmeal with a fiery passion, sadly.

    The only time I ever reach my fiber goals is if I have seeded berries (eg raspberries). So I have been looking for ideas, especially things my husband can actually eat or things that are easy to incorporate into lunch/snacks (has to be easy though or it won't happen, sadly.) So far I have been resisting supplements, though it may come to it eventually.

    Fiber 1 cereal is very high in fibre. Use it instead of breadcrumbs in a meatloaf!

    Peas are chock full of fiber, also added more veggies and ground flaxseed to my smoothies and yogurt.

    Add lime to a black or red kidney bean soup- so good!

    Berries have a high fiber content..... Blueberries, strawberries, raspberries etc. I eat them in the am with oatmeal. Double fiber combo!
