My plan was a complete failure. Never mind that though. I refuse to let it deter me. Oh, I did cook a healthy lunch for myself for the week. Honestly, I didn't want to. I helped move my boyfriends Mom for about 6 hours yesterday and I still had to go to the grocery. By the time I got back I was dead on my feet. I made myself do it anyway and I am so happy I did. I fixed my power lunch. It gives me energy and tastes so so yummy. Basically it's unstuffed green peppers.

3 green peppers diced
1 onion diced (I didn't have one so I used mushrooms, lol)
1 pound ground turkey
1 bag of frozen broccoli
a couple cups of cooked rice.
Lots of garlic, pepper, and some salt.

OH MY WORD it's so good. It tastes amazing. This is my go to lunch. When I'm feeling froggy I add a can of tomatoes and black beans instead of rice and maybe some taco seasoning. I also like a chili lime version of it. I bet it would be good with some hot sauce and blue cheese. Oh my. It easily makes 6 lunches. Delish. I will likely be making it again next week with some modifications.

I plan on riding my bike for 18 minutes tonight. Wish me luck.
