Whole30 - 10 days down!

Can I just say how much I LOVE this diet? Especially now that I made a few bulk meals, and therefore do not have to cook every. single. night. like I did the first few days.
My energy level is significantly higher. My IBS symptoms have all but disappeared. I don't feel exhausted at work in the afternoon.
No clue if I have lost weight or not. I am so excited about the emotional benefits that the weight-loss is very much a secondary concern.
My husband has been cheating on it a bit, and for the last two days has been complaining about how he doesn't feel like he is losing weight. I haven't cheated a single bite! And I feel fantastic!
Some of the tasty things I have had in the last few days, every bit of it homemade, zero added sugars:
Chia seed pudding made with coconut milk (no sulfites!), blueberries, bananas and chia seeds. Very interesting texture.
Beef fajitas - sooo tasty! Yay bulk cooking, I have at least 5 servings of this ready to go. I used SIX bell peppers, various colors, so there is lot of nutrition packed in this yummy meal.
White chicken chili - unbelievable, especially with a couple handfuls of shredded iceburg lettuce thrown on top after reheating. Bulk cooking for the win!
Chorizo con papa - a recipe I learned years ago, just adapted to Whole30 by leaving out the Sazon Goya (first listed ingredient is MSG, which is not allowed on Whole30).
Mashed garlic cauliflower - made with coconut milk that doesn't have any sulfites (took my son and I FOREVER to find a brand without them!), super tasty. They taste nothing like mashed potatoes, which is fine by me. I actually enjoy the taste.
Skillet green beans - ok, seriously, YUM.
Part of the reason why this diet is good for me is because 1) I already enjoyed cooking and 2) I already loved vegetables. I can definitely see how people who do not already meet those two criteria can really struggle with this eating plan. You get 1-2 palm-sized portions of meat per meal and the rest is VEGGIES!
Now, time to go pack tomorrow's lunch!
