Sauteed Cabbage and Zucchini


Ingredients:

1 small head cabbage, chopped
1 small zucchini and yellow squash
Some onion
Some red and yellow pepper
Some collard greens
4 mushrooms
3 broccoli stems
1 tbsp onion powder
1 tbsp garlic powder


Directions:

I spiralized broccoli stems, zucchini and yellow squash, then chop the rest of the veggies.

Heat the skillet over a medium hot and add the cabbage, zucchini yellow squash, broccoli stems, onion red and yellow pepper, stirring really well.
Cover and simmer on a low flame until the cabbage is soft (about 15 minutes).

Add the mushrooms and greens at the end along with any seasoning.



Note:
The vegetables need no oil or water as they will naturally release a lot of moisture. Also, the cabbage will reduce by half as it softens.

You can season any way you like. You can also add any veggies you like or have on hand.

I think some garbanzo beans (or any beans or lentils), tomatoes, and grains.

Remember I didn't measure anything so everything is a guess.
