Bengal Gram and Bottle Gourd from Indian Vegan Kitchen

The Indian Vegan Kitchen by Madhu Gadia is one of my favorite cookbooks, and certainly my favorite Indian cookbook. I love many of the recipes in it, but especially Bengal Gram and Bottle Gourd (in this case, zucchini). I prepared it with no added oil and reduced salt it is still incredibly flavorful! Too bad I can't send the wonderful aroma through the Internet for you to know what I mean!
