Millet with Lentils (and vegetables)

Millet with Lentils, from Vegan Under Pressure by Jill Nussinow--a great cookbook. I made substitutions based on what we had at hand: couscous instead of millet; regular cabbage instead of bok choy; green peas rather than sugar snap peas.
The result? A really delicious dish I've enjoyed all week long. I made a double batch to enjoy. Highly recommended recipe!
