Borscht

3 shredded beets
1 diced up potatoes
10 baby carrots shredded carrots
1 diced onion
1 c. chopped celery
1-2 tsp. lemon juice
1 c. broccoli
1 c. cauliflower
I can green beans
1 big can stewed tomatoes
1c. pinto beans
1 handful of dill
1 cup kale and beet stems
4 kale leaves
6 cups of veggie broth (I used my homemade veggie broth)
1/4 teaspoon (or more) of onion powder, garlic powder, spike, Ms. Dash, paprika, pepper, seasoned salt, basil, curry powder



Directions for pressure cooker:

First chop all the veggies up, shred the beets and carrots, and then in the pressure cooker saute the onion and celery with some veggie broth for a few minutes.

Add beets, carrots, cauliflower, broccoli, pinto beans, green beans, potatoes, tomatoes, kale and beet stems, veggie broth along with the spices.

Turn on the pressure cooker on around 10 minutes and use the natural release. Stir in the kale leaves at the end. Add some lemon juice just before you eat.


Directions for stovetop:

First chop all the veggies up, shred the beets and carrots, then in a large pot saute the onions and celery with some veggie broth for a few minutes.

Add beets, carrots, cauliflower, broccoli, pinto beans, green beans, potatoes, tomatoes, kale and beet stems, veggie broth along with the spices.

Cook until the veggies are done at a lower heat for around 30 minutes. Stir in the kale leaves at the end. Add some lemon juice just before you eat.



Note:

I don't measure anything so everything is a guess. Even the time in cooking is a guess.

You can add any veggies, beans and grains that you want or have on hand.

This recipe is an inspiration from a spark friend, she also added in a large can of v-8 juice, around 1/2 cup of sour cream, one small container of cream and some frozen peas.
