Banana Chocolate Chip Pancakes for Breakfast? Whhaaattt

Monday, May 02, 2016

That's right! I tried a new recipe this morning for only 3 SmartPoints! Flour-less banana chocolate chip pancakes! It was a good switch up from my normal eggs and was very filling! Instead of flour the recipe calls for protein powder which gave the pancakes a different texture, they seemed kind of meaty than bready if that makes any sense at all LOL but they were good. I was very happy with how this recipe turned out. If anyone wants the full recipe, leave a comment below and I'll be glad to give it up!

Absolutely! The recipe calls for 1/4 cup of protein powder (which mine came with a scoop and the scoop was exactly 1/4 cup), 1/4 cup of egg whites which is 2 large egg whites, 1/2 tsp of baking powder, 1/2 of a medium banana (the riper the sweeter the cakes), and 1 1/2 tsp of semi sweet chocolate chips.

Combine all ingredients except chocolate chips and mix and mash into a thin batter. It will be slightly chunky because of the mashed banana and protein powder but get it as uniform as possible.

Then spray a skillet with Pam Olive Oil Cooking Spray (or whatever type you use) and heat over medium-high heat. You can drop half the batter and shape two pancakes and sprinkle with half of the chocolate chips. Make sure to check them they cook very quickly. Flip and cook the other side and take them up and cook the remaining batter the same way!

They were very good in taste, a little different in texture but I will make them again for sure! You can top with the rest of the banana or if you want to add syrup or cool whip you will have to add to the points. =]

This is a good healthy snack, as well. Sometimes, when I'm wanting a chocolaty snack, I make my own chocolate chip pancakes & we eat them like cookies with very cold milk!
