Apple And Orange Salad with Walnuts and Feta

1 Red Apple
3 T orange juice
2 T olive oil
1 T lemon juice
1/4 t coarse sale (sea salt)
1/8 t ground black pepper
1/2 C crumbled Feta or Bleu Cheese
1 c candied walnuts (recipe following at bottom of page)
3 C Romaine lettuce (or more) chopped into small pieces
Whisk 3 T orange juice, olive oil, lemon juice, salt and pepper with orange rind. Add the craisins or raisins to the dressing and let it sit for a while. This will soften them up and give them a chance to "marry" with all the ingredients of dressing.
Pre heat oven to 375 degrees. Set out a cookie sheet.
Heat in microwave until blend-able with a whisk: 2 T butter
1 T water
1/2 C brown sugar
Pour over walnuts until they are throughly covered. Spread on baking sheet and bake. Set aside to cool.
1. Grate rind from 1 orange into a small bowl and set aside.
2. Peel all oranges and section. Reserve juice, squeezing more for the dressing if needed. combine romaine, orange sections and apple in a large bowl. Pour dressing over all and toss well.
Top with Feta. Serve walnuts on the side.
Viola! You have just made a true gourmet salad that you can eat to your heart's delight without worrying about the calories.
